SALMON FILLET WITH HORSERADISH SAUCE



Prepared in 30 minutes Serves: 4

1lb. salmon fillet, with skin
1 tsp. oil
1/4 tsp. each salt and pepper
1/2 cup Giant low-fat or nonfat plain yogurt
1/2 tsp. prepared horseradish
1 1/2 tsp. Giant Dijon Mustard
2 Tbsp. chopped fresh tarragon or 1-1/2 tsp. dried tarragon leaves
Extra tarragon for garnish.

Preheat grill or broiler. Brush salmon with oil and sprinkle with salt and black pepper. Grill or broil salmon 4 to 5 inches from heat source, cooking about 10 minutes per inch, turning once. Remove skin. Meanwhile, mix yogurt, horseradish, mustard and tarragon together. Serve horseradish sauce over salmon and sprinkle with extra tarragon for a garnish.
